Spicy Kale and Cream of Onion soup


Trying to incorporate more veggies and Kale into my diet, this soup turned out quite yummy especially now that the temperatures are lower.

Need
1 cup Kale greens cut lengthwise
1/2 onion chopped
3 cloves garlic chopped
2 tsp black pepper
3 dried red chilli peppers crushed
1/2 cup portebella mushrooms chopped
1 medium carrot cut into circles

Add a small bit of oil to a pot and add the ingredients above
Cover and let simmer for 10 minutes
now add
1 Tofurkey Italian sausage cubed
1 stalk celery cubed
1tsp chopped cilantro
1 tsp chopped green onions
1 medium potato cubed
1 can cream of onion soup
2 cans water

cover and set simmer for 15 more minutes.
add a dash of soy sauce and salt to taste.

Thai inspired coconut milk and ginger tofu with vegetables (Spicy!)



Preparing Tofu
Firstly get extra firm tofu and drain water and press with heavy cans for 1 h until water has drained

Cut into triangles.

Heat oil in a pan ,
to oil add garlic powder, red pepper flakes, old bay seasoning and some sesame oil.
put tofu triangles in oil and let it fry

Turn and make sure that tofu is fried on all sides.
remove from oil and drain on paper towels.

Coconut curry base: Firstly get these vegetables ready
1/2 onion sliced
3 cloves garlic minced
1 tsp grated ginger
1 cup sliced mushrooms
2 chopped Thai peppers
1 medium tomato

Add this to a pot with 1 tsp of oil left over from frying tofu

stir and add
1 tsp tumeric powder,
1 tsp ground cumin,
1 tsp Corrainder seeds
1 tsp Garam Massala
1/2 tsp curry powder

Chop cilantro and chives about (1/4 cup)
add 1/2 of this mix to the simmer and save the other half.
stir for 1 min then add 1 cup coconut milk
cover and let simmer 10 min (add salt at this step)



prepare :
1 stalk celery cut into big cubes
1 zucchini
1/2 cup cauliflower
1 med carrot cut into 1/2 cm thick circles

Add these and fried tofu to the pot, stir and remove from heat, do not over cook the vegetables, the heat from the sauce will be enough cooking for the veggies.
add remaining cilantro and chives and serve with Basmati rice.

Tofu and Vegetable pealu with spicy cucumber raita

First you will need 1/2 package extra firm tofu- let drain for 1 h
After tofu has drained cut into 1 inch cubes.

Take 1 package rice-a roni fried rice and prepare as directed, also add 2 cloves of garlic minced ( do not cook completely, wait until it is almost cooked)
Then in a bowl combine 1 and1/2tbs flour, 1 tsp old bay seasoning, garlic powder, black-pepper.
coat tofu in this mixture and pan fry in vegetable oil until golden brown crust has formed.
Dice the following vegetables
1 bok choy
1 small onion
1/2 green bell pepper
1/2 yellow bell pepper
1 cup cauliflower
1 stem celery

Sautee in a pan with fresh cilantro and green onions
add rice mixture to vegetables and cook for 5 minutes
add tofu cubes and fold in with a spoon.

Do not add additional salt, the rice-a roni mix is a bit salty.


Spicy cucumber raita

use 2 cups plain yogurt
1 cucumber cut into cubes
1 small onion and 3 cloves garlic minced
combine with fresh cilantro


in a small pot heat 1tbs oil
add 1 tsp cumin seeds
1tsp tumeric powder
1 tsp mustard seeds
2 tsp chopped green chilli peppers
a pinch of ground cumin
chopped parsley
allow to fry well then pour over cucumber mixture and mix well.







using same oil sautee,

Buttermilk pineapple cake

need 2 sticks of butter softened
blend well with 1/2 cup sugar until mixture is smooth

fold in 1/2 cup butter milk until smooth
mix in 1/2 cup pineapple juice from a can of crushed pineapple
stir in 1/2 can crushed pineapple

add 1 tsp vanilla

blend well
add 2 tsp baking powder and fold in 2 and 1/2 cups flour


bake 325 degrees for 30 min in a deep pan


allow to cool
in the meantime whip 1 cup heavy cream, add rest of crushed pineapple

when cake is cooled slice in half ( top and bottom) ans scoop whipped mixture in between. Replace top on cake and cover with remaining frosting.

स्क्रेम्ब्लेद tofu

Scrambled Tofu

1 pkg soft tofu
chopped Cilantro
chopped celery
chopped chives
chopped onions
2 chopped plum tomatoes
minced garlic
chopped sweet peppers
chopped carrots
black pepper, salt
Tumeric
Cheddar cheese
olive oil

step 1.
Drain water from tofu and mash with a fork, season with minced garlic, chopped chives tomatoes and cilantro. leave for 1/2 h to 1 h

Step 2. heat oil in frying pan,add tumeric, chopped onions, celery, sweet peppers and carrots.

step 3 when vegetables are fried add tofu, salt and black pepper.

step 4 cook until all the water has dried from the tofu and it is the consistency of cooked scrambled eggs, add cheese and mix.

Can serve in a pita wrap, with lettuce avacado and bleu cheese.

lentil and sweet potato soup

need :
2 cups lentils
2 medium sweet potatoes peeled and cubed
1 cup mixed vegetables (corn, green beans, mushrooms etc or whatever you like)
green chilli pepper (chopped)
4 cloves garlic minced
2 tsp finely chopped ginger
1 medium onion chopped finely
1 medium carrot diced
Finely chopped parsley, cilantro and chives
Olive oil
Salt and black pepper to taste

1tbs olive oil

Step 1:
In a pot boil lentils in approx 6 cups water (this will be the stock for the soup so more water is used here)
Add garlic and ginger, boil until lentils are soft

Step 2
In a pot, add olive oil,
When oil is heated add onions green chilies, carrots and sweet potatoes,
Let these cook for about 2 minutes
Then add mixed vegetables
Cover and let cook for a couple more minutes
step 3
After veggies have become slightly tender, add lentils and cover and let simmer for about 10-15 minutes
step 4
After 15 minutes if the sweet potatoes are nice and soft , add parsley, cilantro chives, salt, black, pepper and butter.
Stir and that’s it.

Three step carrot cake: really easy

okies check this out its really easy and really really yummy

step 1 : get food processor

add 2 sticks of real butter ( softened)
add 1/3 cup brown sugar
3 medium carrots chopped
1/3 cup condensed milk
1/3 cup evaporated milk
2 tsp ground cinnamon
1 tsp vanilla extract

turn on food processor and let mix(blend, grind until light and fluffyish:P)

step 2: take mixture, now fold in 2 cups flour and 2 tsp baking powder

step 3: pour mixture into greased bowl, and bake at 375 degrees F for 20-30 minutes
