Fungi (Caribbean cornmeal recipe)


This one is really awesome! Got it from my aunt


you will need

1 onion minced
3-4 garlic cloves minced
1 stalk celery minced
black pepper
3 okro's sliced thinly
red pepper flakes,black pepper salt, oregeno(parsely whatever you have lying around)
step1
in a pot add a little oil and cook these for about 2-3 minutes
step 2
add about 6 cups water to this and bring to a boil
step 3
need 1 cup cormeal, mix with cold water into a thick paste and then add to pot when water is boiling, add a little butter at this point.
stir constantly for 5-10 minutes !
when mixture has thickned considerably pour into a dish and leave it to settle for about 1/2 hour
it should be the consistency of jello when done:)



Serve with Tomato Choka
real easy

put 2 or 3 tomatoes in microwave with chopped onions, garlic and hot pepper for about 3-4 minutes
heat a little oil in a pan
when tomatoes are cooked and soft, mash with a fork and pour hot oil over mixture,(be careful!!!!)
add salt and thats it:D




vegetable casserole


My mom doesn't like green beans much so I put in other vegetables into the classic green bean casserole recipe to make it more appealing to her:)

step1
2 medium potatoes diced
1 carrot sliced or cubed
1 cup whole frozen/fresh green beans
1 stalk celery cubed
1 onion minced
4 cloves garlic minced
black pepper, salt, oregano, red pepper flakes
combine these in a bowl
step 2
1 tin condensed mushroom soup
1/2 cup 2% milk
mix these well and add to above mixture and stir
step 3
pour 1/2 mixture into casserole dish
layer with fried french onions or cheese
pour rest of mixture and top with either fried onions or cheese
bake 20-30 min @ 360 until potatoes are cooked

feta- brocolli lo-mein

Very Easy:D
need
1/2 brocolli
1/2 cup chopped walnuts
3/4 cup crumbled feta cheese
1/2 onion chopped
2-3 cloves garlic miced
1 tsp minced ginger
olive oil
1/2 sweet pepper sliced thinly
1/4 cup snow peas
1 stalk chopped celery
lo-mein noodles (or sphagetti)
red pepper flakes

step 1
boil noodles with a little salt and tiny drop of oil. strain and set aside
step 2
heat olive oil
combine mushrooms , celery, onions, sweet peppers cook 3-5 minutes
step 2
and snow peas, minced garlic, ginger and brocolli cook 2-3 more minutes
add salt and black pepper
step 3
add noodles and mix with a little olive oil if its too dry
step 4
toss with walnuts, red pepper flakes and crumbled feta cheese:D

awesome pasta

step 1:
in a pot put first
1 onion diced.
4 cloves garlic minced and some chopped celery and green peppers
1 cup frozen veggies or regular veggies whatever you like
1/2 cup diced zucchini is awesome

step 2:
after it has cooked a little add
1 can tomato soup ,and 1.5 canwater
1 cup pasta
salt, black pepper, oregeno etc (whatever you like or have)
let it cook, it should thicken, when it is done add a little cheese
and thats it

mushroom-pea soup

step 1
1 onion diced
3 cloves garlic minced
some diced celery-----------> heat oil put these three into pan
step 2
while this is cooking about 2-3 minutes
get ready
1 medium potato chopped
1 cup peas and carrots (or whatever vegetable you like)
1 jalepeno pepper or green pepper diced
1 cup fresh mushrooms diced
----->now add these let cook for a couple extra minutes
step 3
get 1 can cream of mushroom soup add 2 cans water
add 1/2 cup ziti or whatever pasta you like
cover, let it cook on medium heat.
add salt black pepper, oregeno and a tiny drop of soy sauce (basically whatever spice you like)
soup is done when pasta is cooked (about 10 minutes)
enjoy!

Usually I toast plain bread and have it with this soup but I guess crackers or whatever you like will work too
